Gr\u00e2ce au Koji, nous pouvons fabriquer divers condiments traditionnels japonais comme le Miso, le Sak\u00e9, le Mirin, la sauce soja, le Sh\u00f4ch\u00fb, l&rsquo;Amazak\u00e9, etc. Le Koji est utilis\u00e9 en cuisine pour conserver les aliments par mac\u00e9ration et pour ajouter un go\u00fbt savoureux aux plats, <i>l&rsquo;Umami<\/i>, \u00e9galement appel\u00e9 \u00ab\u00a0le cinqui\u00e8me go\u00fbt \u00bb.<\/p><p>Les ingr\u00e9dients conditionn\u00e9s avec le Koji comme les c\u00e9r\u00e9ales, la viande ou les l\u00e9gumes sont d\u00e9compos\u00e9s par la fermentation et l&rsquo;amidon, la graisse et les prot\u00e9ines de ces aliments se transforment en sucre (glucose, maltose etc.) plus facilement. La livraison peut donc \u00eatre de deux semaines apr\u00e8s la commande.
